I love this recipe! Been making it in the Fall or Winter for about 2 yrs now.
It’s so tasty. You can sub spiral rotini pasta if you can’t find egg noodles and it’s just as good. I also use mascarpone cheese instead (as I’m allergic to goat cheese) and it melts in and incorporates beautifully. It’s a nice warm, easy to make, comforting, 1 dish meal that is great on a cold night. My hubby & our picky kid both love it 🙂

I have done it with pancetta, leftover ham, bacon and even leftover pork roast, then I have used noodles, Bow tie pasta, gnocchi, perogies and all are great. We do use very lil cheese as we prefer without cheese ( Just a majority family preference) I have put some cottage cheese it and was good.
