I’m never frying chicken again! This is the best recipe I’ve ever found to make crispy chicken wings. I’ve made this twice since last week and my grandson has asked for more this weekend. Made it with the garlic parmesan sauce. Delicious!

I previously made these as wings as this recipe prescribes but finally got around to trying this technique with full sized legs. OMG also AMAZING! I did the quick dry method of 45 min at 250 and then did 30 min at 425 convection and they were perfectly cooked at 170 degrees. I topped them with the butter parm sauce and everyone LOVED it. Can’t recommend enough!

Welp. I made three lbs in batches which means I ended up using closer to 3tbs of baking powder because all the seasoning stuck to the chicken…. My family of three ate all of it. Meanwhile I started reading about how baking powder makes the skin crispy and ended up going down a rabbit hole that lead me to finding out my family and I may have just consumed a dangerous amount of baking powder. I’m kinda freaking out and here to just tell everyone to follow the recipe exactly and not get creative with the baking powder.
