Only way I’ll ever make scrambled eggs from mow on. I did adjust a bit.
• 3 eggs is too much for 1 person, so I used my normal 2, then slightly less butter.
• toward the end of cooking, I added salt, lemon pepper and my scrambled egg seasoning AND a sprinkle of Colby jack cheese. I like to experiment with my Penzey’s spices and seasonings in èverything. Also, my specialty olive oils.

I put a pat of butter in fry pan first then add the whipped eggs and water and then wait half minute and then keep moving till very little moisture is left….so good….

A variation of Oriental scrambled eggs. Melt butter in heavy bottom skillet, break eggs into skillet, cook eggs with whole yolks till half done. Egg whites cooked till solid white. Gently mix with spatula till firm. Season & enjoy. Shredded mozzarella can be added for extra taste & fluffiness

I have tried it and it does turn out very good scrambled eggs. For me though 1 tablespoon of butter is not a little bit. I was thinking of trying half butter and half olive oil.

I’ve been using a spatula to stir but adding milk. I like the butter idea and will try that. Even my way and stirring constantly make them so fluffy. Thank you for your suggestions. Appreciated.
