I love this recipe! I use it as a base then add any mix-ins I can think of from banana, pineapple, and coconut, to raisins, cranberries, nuts, and flax. They are always a hit. Thanks

Made these twice this week with blueberries. Delicious. Plan to vary the added ingredients-nuts, cranberries etc. Thanks and I so enjoy your cookbook.

These muffins really are melt-in-your-mouth AMAZING! I am a speech language pathologist doing feeding therapy with a 10 year old who has anxiety and struggles to eat solid foods. SHE SCARFED THESE DOWN WITH GUSTO!! I can’t stress enough what a phenomenal achievement that was! I love the tip in the comments about adding some maple syrup! I called them “maple syrup muffins” (because she probably would have resisted if I called them “bran” muffins!) Thank you for posting this incredible recipe, it’s a winner!

Found this recipe on Fran’s Favs and made it. AWESOME! Did make an adjustment due to inaccurate measuring of bran cereal. The mixture was too dry, so I added add’l 1/4 cup of whole milk. It was still too dry, so I blended a banana with approximately 2 tbsp of coconut water & added that; it was a perfect texture. I skipped the raisins and pushed blueberries into the top of each cup of batter. These are incredible! Thank you!

In reply to Nancy Sadler. I freeze them by first wrapping in plastic wrap, then aluminum foil no issues with taste or texture; when un-thawed they taste great.

These were awesome ! Of course I cannot follow a recipe exactly, ( added grated apple, blueberries and a little flaxseed meal ), but using this recipe as a base worked out perfectly. Will make it again soon ! Thank you

I didn’t have coconut so I sub for veg oil. Didn’t have buttermilk either; sub for balkan style yogurt mixed with a little water. They turned out great, crispy on top and very moist. I’m going to make another batch and this time I am going to add nuts.
